Ingredients

20g of clean protein. Zero flour. Total lightness.

Step-by-Step Instructions

Claire's tested foolproof method for the ultimate cloud-like lift.

Easy • 5 Steps
1

Preheat Oven & Whip Egg Whites to Stiff Peaks

Preheat your oven to 350°F (175°C) and line a flat baking sheet with parchment paper. Separate the 3 pasture-raised eggs into clean bowls. Add the 1/2 tsp of baking powder (or cream of tartar) to the egg whites. Using a hand mixer on high speed, whip for 3 minutes until glossy, stiff cloud peaks form.

2

Blend Cottage Cheese & Egg Yolks

Place 1 cup of full-fat cottage cheese and the 3 egg yolks into your food processor. Blend on high speed for 45 to 60 seconds until the mixture transforms into a velvety, completely smooth cream with zero graininess or curd texture.

3

Fold Gently to Preserve Airy Volume

Transfer the blended cottage cheese cream into a large bowl. Spoon 1/3 of the whipped egg whites in and gently fold using a silicone spatula to lighten the base. Then, gently fold in the remaining whites using slow, upward circular strokes to lock in all that delicate air.

4

Shape 4 Cloud Mounds on Baking Sheet

Using a large spoon, portion the fluffy batter into 4 equal cloud mounds on the lined baking sheet, leaving at least 2 inches between each mound. Lightly smooth the tops with the back of the spoon. Sprinkle toasted sesame seeds or seasoning over top if desired.

Bake to Golden Perfection & Serve Warm

Bake at 350°F (175°C) for 23 to 25 minutes until the tops turn puffed, lightly browned, and set to the touch. Turn off the oven, prop the door slightly open for 5 minutes, then serve warm with grass-fed butter, cream cheese, or avocado!
